Fleur de sel
This translates to “flower of salt”. It is a hand-harvested sea salt collected only from the top layer of salt before it sinks to the bottom of large salt pans. Traditional French fleur de sel is collected from Brittany -the north-west coast of France.
Fleur de Sel is cautiously raked up with a lousse à de fleur, a tool designed to collect the salt without disturbing the tender crust.
Due to its scarcity, it is one of the most expensive salts available.
Ideal for salads, cooked fresh vegetables and grilled meats.
Fantastic with chocolate and caramels.
