TARTE TATIN

Yet another dessert that is simply stunning! The flavours and textures are fantastic yet this is very simple to make. Tarte Tatin is essentially an upside-down tart in which the fruit is caramelised in butter and sugar.

Ingredients

1 cup sugar
1/4 cup water
125g unsalted butter
Puff pastry
Fruit of choice – I have made these with bananas, apples, and pears

Method

Caramelise sugar then stir in butter.
Pour caramel mixture into small roesti pans. I prefer to use these small pans for individual serves as they easy to handle.
Top with sliced fruit of choice slightly overlapping. Remember that this is the presentation side so you may want to arrange the fruit nicely.
Top with puff pastry making sure to tuck pastry into edges.
Place roesti pans on a baking tray to catch any bubbling caramel during baking.
Bake tart in oven for about 30-35 mins until golden brown. Allow to rest for approx 7 minutes before turning out to serving dish.
Serve with a good ice cream – I like salted caramel ice cream either to one side or directly on top. Enjoy!
