I love using this pastry as it is not overly sweet. It allows the main ingredient to remain the hero of the dish.

Sweet Pastry


350g plain flour

50g icing sugar

200g butter, cut into small cubes

1 egg


Combine plain flour and icing sugar in bowl of food processor. Pulse to incorporate.

Add cubes of butter and pulse until mix looks like fine breadcrumbs.

Add egg and pulse until dough comes together into a rough ball.

Tip dough out onto a lightly floured surface and knead lightly into a ball.

Wrap in plastic film and refrigerate for at least 30 minutes before using.
